The quarter's cheese expert comes up with well-known and innovative recipes made from cow, buffalo or goat milk. Tracked down by Samuel Spörri and his team, they are presented in the extensive display IM VIADUKT: goat cheese from the Loire Valley, sheep cheese from Piedmont and various discoveries from small cheese factories from mountains and valleys. Milk from Längimoos complements the offer with fresh cow juice straight from the farm on the outskirts.
